About

A concierge at heart.

Paolo Fontana came up through the kitchens that defined modern New York dining — Union Square Cafe, Gramercy Tavern, Craft and Babbo, with a stage at Chez Panisse — before running kitchens of his own and teaching as Executive Chef and instructor at the New York Institute of Technology.

In 2010 he founded the café at Stony Brook University’s Simons Center for Geometry and Physics and ran it for eight years: a scratch kitchen, a catering operation trusted with the university’s most high-profile guests, and a seat at the table for the building’s expansion. Edible Long Island named him a Local Hero in 2015.

Executive-chef roles at Woodside Country Club, Elegant Eating and Blue Point Brewing (AB InBev) followed. From 2022 to 2026 he was at St. George’s Golf & Country Club, promoted from Executive Chef to Clubhouse Manager with COO scope: Board and committee partnership, a full calendar of member events, and an F&B operation that grew every year. Golf Inc. featured his work in 2025 and seated him on the national judging panel for its 2026 Golden Fork Awards.

He now leads Applied Audit Technologies, the company behind GMAI — hospitality software built by an operator, for operators. Whatever the title, the job has always been the same: make people feel looked after.

Control costs. Keep your team ready.

GMAI connects purchasing, recipes, events and daily operations in one place, so a chef or a general manager can see what changed, what each item costs, what is planned and what comes next — and ask the operation a question and get a number that carries its paperwork. Built from twenty years of running kitchens and clubs.

Golf, with Italian character.

A Sicilian-inspired golf and clubhouse wardrobe that starts from the Ace of Bastoni — the suit of clubs in the Sicilian deck — and carries it from the card table to the first tee. Two collections are in the works: Il Campo for the course and Il Tavolo for the table afterwards. La strada per l’Etna.
